Properties: white flake crystal or crystalline powder. It has a special smell. It tastes slightly sweet. Melting point 281 degrees (decomposition). The pH value of 10% aqueous solution is 5.6-6.1. It has no optical activity. It is stable to heat and air. It is unstable to strong acid, which can lead to demethylation. It is soluble in water (3.3g/100ml, 25 ℃), dilute acid and dilute reduced solution. It is extremely insoluble in ethanol and almost insoluble in ether.
Purpose:
1. Nutritional supplements. DL methionine is one of the basic units of protein and the only amino acid containing sulfur among the essential amino acids. It is not only involved in the transfer of methyl, the metabolism of phosphorus and the synthesis of adrenaline, choline and creatine in animals, but also the raw material for the synthesis of protein and cystine. If lacking, it will cause liver and kidney disorders. It can promote the growth of hair and nails, detoxify and enhance muscle activity.
2. Prepare into flavoring liquid. It has the same physiological effect as L-methionine, but its price is low, so DL methionine is generally used. It is a restricted amino acid in oat, rye, rice, corn, wheat, peanut flour, soybean, potato, spinach and other plant foods. It is added to the above foods to improve the balance of amino acids. The requirement varies with the intake of cystine. The adult male requirement is 1.1 g/d. The taste of sea urchin is related to methionine, the sweet taste of sea urchin is related to glycine and alanine, the bitter taste is related to valine, and the fresh taste is related to glutamic acid.
